This Iberian pork shoulder is crafted from free-range Iberian pigs raised on expansive pastures, where their diet includes nutrient-rich acorns. Naturally high in vitamin E, these acorns act as powerful antioxidants, allowing for a slow 24-month curing process that develops the shoulder’s distinctive flavor.

Tasting Notes
The piece features lustrous, translucent fat and a vibrant cherry-red lean marbled throughout. Its aroma is intense, persistent, and beautifully matured. The fat is soft and silky, while the lean meat remains juicy and tender.
